One of the things I was trying to sneak into my schedule on Saturday/Sunday was cooking up a rather large pumpkin. The weather around here has turned a bit colder - and I brought my pumpkins out of the cold. I brought a rather large one into the house as I wanted to get it cooked up.

First step was to cut it in half. This time I decided to cut it in half, clean out the center of seeds and put it in a jelly roll pan and cooked it until it was soft.

Then, I let it sit through the night and actually knew I had to take care of it the next day or it would be too late. You can’t just leave things like this without them spoiling, growing mold, etc.

I peeled the two halves of the pumpkin and cut it into big pieces.

Then I put these pieces into the food processor and pureed them.

After I pureed all of the pumpkin, I put 2 cups of pureed pumpkin into each bag.

Then I put it in the freezer.

I got 13 bags from that one pumpkin - which will make 26 loaves of pumpkin bread! I’m thinking of making a lot of it for Christmas presents! Years and years ago I made trays of homemade desserts and we gave them to the neighbors. Maybe I’ll do it again this year - I’m thinking about it anyway. This pumpkin will supply the pumpkin for the bread!
