Dehydrating My Hot Peppers

I did end up picking a lot of those hot peppers from my garden. Yikes. They are hot!

However, I do want to try to use them - as much as possible. I am treating them with the greatest of respect, however. Once we had a frost, I took all the ones I wanted from the plants and gave the plants and all that was left on them away to a neighbor. Some went to some people at the church.

Because I knew I couldn’t just use them straight - I went ahead and bought some bell peppers in yellow, green and red, and dehydrated them to add to the hot ones I raised. I had to dilute the flavor a bit as they were too strong to do anything with!

So over a period of a few days I did several loads in the dehydrator. I've been uncertain as to how many of the hot ones to do because I don’t want to make the pepper mix so spicy that I can’t stand to use it!

The hot peppers - they dry faster because there isn’t that much to them.

The bell peppers have more to them and take longer to dry.

But now I have this beautiful mix of mainly bell peppers, but some of my own peppers. It looks like this.

But next I will chop the mix finer because if I were to put this in chili or a meal as a spice and someone got a whole quarter of one of those hot peppers, it could be bad news!

Just a note - the ones I grew this summer was called Koral. Here’s another little short description.

So, this is what I have after I have dehydrated all the peppers I am going to do this year. I just kept going and going! But I’m done for now. I can use this mix in chili or other things I decide to make that uses peppers.

Here are some of those very hot ones that I did at the end. I kept going until I had two very large jars. I still have not chopped them up very finely - but I will. I may do it as I want to use it. It is all so pretty to look at right now.

 

And this ends my adventure into growing hot cherry peppers for this year. These particular peppers are simply too hot for us to eat plain as they are. They have to be cut up and served in very tiny portions in with other food!
